    Romaine and Pear Salad with Sherry Walnut Vinaigrette

    This salad was so yummy I could have polished off the whole thing myself!

    Sherry Walnut Vinaigrette
    1. 2 1/2 tbsp sherry vinegar
    2. 1 small clove garlic, minced
    3. 1/2 tsp dried tarragon
    4. 1/2 tsp dried basil
    5. 1/2 tsp sugar
    6. 1/2 tsp salt
    7. 1/2 tsp freshly ground black pepper
    8. 2 tbsp walnut oil
    9. 2 tbsp olive oil
    10. 1 head romaine lettuce, torn into bite size pieces
    11. 1 or 2 ripe Bosc pears, cored and chopped
    12. 1/3 cup toasted walnut pieces (toasted in 350 degree oven for about 5-10 minutes. Watch closely)
    Instructions
    1. To make the vinaigrette, in a small bowl, combine the vinegar, garlic, tarragon, basil, sugar, salt and pepper. Stir in the walnut and olive oil until well blended. Set aside.
    2. In a large bowl, combine the lettuce, pears and walnuts. Drizzle on the dressing and toss well to coat. Serve immediately.

    Walnut Salad with Quinoa

    Ingredients
    1. 4 cups chopped spinach
    2. 2 cups chopped kale greens
    3. 1 cup cooked quinoa
    4. 1/2 cup shredded carrots
    5. 2 tbs walnuts
    6. 2 tbs raisins
    7. 3 tbs balsamic vinegar
    8. 2 tbs mustard
    9. 1 tbs honey
    10. Depending on what else I have lying around I'll sometimes add broccoli, avocado, red cabbage, roasted potatoes, etc. To mix it up.
    Instructions
    1. Mix all together and enjoy!
