    3 Bean Vegetarian Chili
    OMG this Chili was awesome! I added extra beans and omitted the tofu from the original recipe. I also omitted the hot sauce. Super Yum!

    Ingredients
    1. 1 medium onion, chopped
    2. 1 medium green pepper, chopped
    3. 2 garlic cloves, minced
    4. 2 tsp olive oil
    5. 1 tsp cumin
    6. 1 tsp hot sauce, or more if desired
    7. salt and pepper, to taste
    8. 1 15oz can red kidney beans, drained
    9. 1 15oz can pinto beans, drained
    10. 2 15oz can garbanzo beans, drained
    11. 1 28oz can diced tomatoes
    12. 2 14oz cans tomato sauce
    13. 3 medium carrots, sliced
    14. 2 1/4 tablespoons chili powder
    Instructions
    1. Saute the first four ingredients over medium heat. Add the cumin, salt, and pepper, and saute until crisp and lightly browned (10 minutes). Add the remaining ingredients. Bring to a boil, then reduce heat and simmer 45 to 55 minutes.
